As you transform your life during Get Slim for Summer, you’re going to need some healthy recipes, and we’ve got you covered! These three recipes are healthy, easy to make, and most importantly, delicious. As a bonus, each recipe makes multiple servings so you can share them with your family or enjoy them for a few meals.


Slow Cooker Shredded Chicken


  • 2 lbs. boneless, skinless chicken breasts
  • salt
  • 1 tsp. black pepper
  • 1 tsp. garlic powder
  • 1 cup water or chicken broth


  1. Place chicken breasts in slow cooker and sprinkle with seasonings. Add water or chicken broth.
  2. Cover and cook on low for 5-6 hours or until the chicken shreds easily with a fork.
  3. Remove the chicken with tongs and shred using two forks. Use immediately or freeze in plastic bags or a sealed container.




  • 2 lbs. Lean ground pork
  • 1 lbs. Lean ground beef
  • 2 tbsp. Italian seasoning
  • 1 egg
  • 1 tbsp. parsley finely chopped
  • 2 tsp. salt
  • 1 tsp. ground black pepper


  • 28 oz. can crushed tomatoes
  • 1 medium onion, finely chopped
  • 2 tbsp. olive oil
  • 1 bay leaf
  • 1 clove garlic, chopped
  • 1 tbsp. parsley finely chopped
  • 1 tsp. black pepper


  1. Preheat your oven to 400° F.
  2. Line a sheet pan with foil.
  3. Mix the meat, egg, and seasonings together in a large bowl. Form into even-sized meatballs (about two tablespoons each) and place them on the lined sheet pan.
  4. Bake for 20 minutes or until cooked through.


  1. Add the olive oil to a pan and heat up on a medium heat. Add the chopped onion and sauté for five minutes. Add the chopped garlic, canned tomatoes, bay leaf, and pepper.
  2. Cook on a low-medium heat for 20 – 30 minutes.
  3. Serve over the cooked meatballs and sprinkle with chopped parsley.

Tilapia and Avocado Pico


  • 4 6-oz. tilapia fillets
  • 2 teaspoons cumin
  • 1 lime
  • 1 avocado, diced
  • 2 medium tomatoes, diced
  • 2 tablespoons fresh cilantro
  • Salt and pepper to taste


  1. Preheat oven to 450º F. Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Lay fish out on baking sheet and spray the top with a little cooking spray. Sprinkle evenly with cumin, salt, and pepper. Cut lime into thirds width-wise, using the middle third to cut four 1/4 inch thick rounds. Using one of the remaining thirds, drizzle fish evenly with lime juice. Lay 1 lime round on top of each fillet.
  3. Bake fish at 450º F for about 8 minutes until fish becomes flakey, adjusting based on your oven.
  4. While the fish is cooking, combine avocado, tomato, and cilantro. Season with salt and pepper and the juice of the remaining third of the lime.
  5. When fish is done, top with the avocado pico and serve.
